GFCFCF Awesome Muffin's




Gluten and Casein Free Corn FREE Muffins
Gluten and Casein  and Corn rot your brain. :O(

1 1/2 cups Brown Rice flour
3/4 cup flax seed meal
...1 cup brown sugar
1 tp baking powder
2 tps baking soda
1/4 tp salt
2 tps cinnamon
2 tps pumpkin pie spice
1/4 tp ground cloves
1 tp ground ginger
2 apples, grated
3/4 cup soy milk
1 large egg
2 egg whites
1 tp vanilla extract (or Not)
1/2 cup fresh or frozen blueberries (what ever berries make you happy)

Preheat oven to 350 deg, Mix all dry ingredients together. In a separate bowl, combine liquid ingredients and beat for 30 seconds. Pour liquid ingredients into dry ingredients, stir to mix. Fold in blueberries.. Fill each muffin cup 3/4 full and bake at 350 deg for 35 - 40 minutes.

GFCFCF Rice Crispy Treats!!

GFCFCF = Gulten Free, Casine Free/ Milk Free/ Corn Free

  • 4 cups of Rice Crispy Cereal 
  • 4 big spoons of peanut butter
  • 1/4 cup of Ohgave ( Agave Nectar) 
  • 4 table spoons of flax seed
  • Cook it in the Freezer for 20 or 30 mins to stiffen it up :o)
  • Then cut and eat :o)

Yummy Balls

  • 1/2 cup of oat meal 
  • 1/4 cup of flax seeds..... 
  • 3 ish spoons of peanut butter 
  • Ohgave (Agave Nectar)  to sweeten it 
  • And I threw in some Mike FREE chocolate chips
  •  Then cook them in the freezer for about 10 minutes to make them nice & firm balls :o)  

Then store them in the refrigerator .

Olley Chocolate Icing THICK!! Icing

Makes about 2 cups

Prep Time: 5 minutes

Total Time: 5 minutes

Ingredients:

  • ¼ cup dairy-free butter (Smart Balance Light)
  • ¼ cup plain unsweetened milk or soymilk
  • ¾ cup unsweetened pure cocoa powder
  • Ohgave! (Agave nectar) add it til it taste sweet (about 8 tablespoons)
  • Ok Now here's the trick to make it nice and thick .. like Real!!! Icing!!  add Rice Flour :o) add it until it's Thick. (about 1/4 cup or less)
  • now that you have it all thick taste it again , you might want to add more Ohgave! to bring the sweet back up :o)
  • Enjoy
